Truffles are one of the world’s great delicacies, so why not enjoy this decadent tasting but good-for-you version, which is also a snap to make? It’s also a versatile recipe in that you can alternate almond for cashew butter, use other nuts, such as pecans, dust with raw cacao powder or shredded raw coconut. Your options abound!
1/2 cup raw cashew butter
1/3 cup maple syrup
3 -4 tablespoons cacao powder
16 whole hazelnuts
1/2 cup chopped hazelnuts
Directions:
In a large bowl cream together nut butter, maple syrup and cacao powder. Chill, then form into balls with a hazelnut at center of each. Scatter your chopped hazelnuts on a chopping board or plate and roll the balls until they are liberally coated in chopped hazelnuts. Place in the fridge again for 5-10 minutes. Remove from the fridge a few minutes before serving.
